(serves 2)

You will need a cezve or a narrow stove-safe pot with a handle. 

  • 2 cups water (use the cups you intend to serve the coffee in to measure)
  • 2 heaped teaspoons ground Turkish coffee (ie coffee prepared for Turkish coffee – it is ground very fine)
  • 2 level teaspoons sugar (this will make it medium sweet)
  • 1 cinnamon stick
  • 2 cardamom pods, crushed to open
  • Cream or milk to taste (optional)

Place the water in the cezve and place on the stove. Let the water heat up but not boil. Add the spoonfuls of coffee and sugar and let it float on the top – do not stir it in. 

Continue to gently heat until the coffee is soaked through with the water – at this stage, stir it vigorously with a spoon which will create some foam on top. Turn down the heat to low and add the cinnamon stick and cardamom pods. Continue to monitor as small bubbles form on the surface. Do not let it boil at any stage. If it gets too hot, remove it from the stove until it cools again.

Once the foam (or crema) has formed on the surface, remove from the heat and let it sit for about a minute. This will allow the grains to sink to the bottom. You can also add a few drops of cold water to assist with the grain sinking process.

To serve, pour into your serving cups and spoon some of the foam over the top. Add a cinnamon stick if desired, and (optional) cream or milk to taste.
